These Homemade Lemon Oreos have a zesty lemon flavor and are a delightful treat. These soft and chewy lemon-flavored cookies are filled with a luscious lemon buttercream and are ideal for citrus fans!
Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. 1 tablespoon lemon zest. 2 tablespoons fresh lemon juice. 2 1/2 cups all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon salt. 1/4 teaspoon baking soda. Yellow food coloring optional. For the filling:. 1/2 cup unsalted butter, softened. 2 cups powdered sugar. 1 tablespoon fresh lemon juice. 1 teaspoon vanilla extract. 1 teaspoon lemon zest. A pinch of salt.
Instructions: Melt the butter and mix it with the sugar in a large bowl until the mixture is light and fluffy. Add the egg, vanilla extract, lemon zest, and lemon juice and beat until everything is well mixed. You can make the lemon color more vivid by adding a few drops of yellow food coloring. Mix the all-purpose flour, baking powder, salt, and baking soda together in a different bowl. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. Split the dough in half and roll out each half into a disc. Cover with plastic wrap and put in the fridge for at least an hour. Warm your oven up to 350F 175C and put parchment paper on baking sheets. The dough should be chilled. On a floured surface, roll out one disc of dough to about 1/4 inch thick. Cut rounds of dough with a cookie cutter and place them on the baking sheets that have been prepared. Put the cookies in the oven for 10 to 12 minutes, or until the edges begin to turn golden. Let the cookies cool for a few minutes on the baking sheets before moving them to wire racks to cool all the way. For the filling, beat the butter until it is smooth and creamy. Add the powdered sugar, lemon juice, vanilla extract, lemon zest, and a pinch of salt one at a time. Beat until everything is well mixed and fluffy. Put a lot of the lemon filling on the flat side of one cookie, then put another cookie between them. Do it again with the rest of the cookies and filling.
