This Apple Cinnamon Quinoa Couscous is a healthy and filling dish that tastes great together. Apples, cranberries, and cinnamon make this a great fall comfort food because of how sweet and warm they are.
Ingredients: 1 cup quinoa. 2 cups water. 1 cup couscous. 1 1/2 cups apple juice. 1 apple, diced. 1/2 teaspoon ground cinnamon. 1/4 cup chopped walnuts. 1/4 cup dried cranberries. Salt to taste. Honey optional, for drizzling. Fresh mint leaves for garnish optional.
Instructions: Rinse quinoa thoroughly and combine it with 2 cups of water in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork and set aside. In a separate saucepan, bring the apple juice to a boil. Stir in the couscous, diced apple, and ground cinnamon. Remove from heat, cover, and let it sit for 5 minutes. Fluff the couscous with a fork and combine it with the cooked quinoa. Add chopped walnuts and dried cranberries to the mixture. Season with a pinch of salt and mix well. Drizzle honey over the couscous for added sweetness optional. Garnish with fresh mint leaves for a burst of freshness optional. Serve warm or at room temperature and enjoy!
