These Grilled Lamb Sandwiches are a perfect combination of tender lamb chops, vibrant vegetables, and tangy feta cheese, all tucked into a ciabatta roll. The marinated lamb brings a burst of flavor, making this a satisfying and savory meal for any barbecue gathering.
Ingredients: 1.5 lbs lamb chops. 1/4 cup olive oil. 2 tablespoons balsamic vinegar. 3 cloves garlic, minced. 1 teaspoon dried oregano. Salt and pepper to taste. 4 ciabatta rolls. 1 cup arugula. 1 large tomato, sliced. 1/2 red onion, thinly sliced. 1/2 cup feta cheese, crumbled.
Instructions: To make the marinade, put equal parts olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and pepper in a bowl. Pour the marinade over the lamb chops in a plastic bag that can be closed again. Put the bag in the fridge for at least two hours, or overnight for the best results. Warm up the grill over medium-high heat. Take the lamb chops out of the marinade and cook them on the grill for 4 to 5 minutes on each side, or until they are done the way you like them. While the lamb is cooking on the grill, toast the ciabatta rolls on both sides. Put grilled lamb chops on the bottom half of each roll to make the sandwiches. Spread arugula, tomato slices, red onion, and feta cheese on top. Put the other half of the ciabatta roll on top, and if you need to, use toothpicks to hold it in place. After the sandwiches are put together, grill them for two more minutes on each side, or until the bread is toasted and the fillings are hot all the way through.
