I tried my #carrotand chickpea #veggiesquares on a #toasted #ciabattabun with the leftover #eggsubstitute I used for coating my #breadedtofu slices. I have always cooked eggs after I used them for French toast or coatings. I #sautéed my #beansandquinoa mash and added #boiled #potatognocchi. I topped it with my chunky #pineapplesalsa for some #tangyspice. I #sautéedspinach just because I try to keep something green on my plate.
