Ingredients: 8 oz 225g semisweet chocolate, finely chopped. 1/2 cup 120ml heavy cream. 2 tbsp unsalted butter. 1 tsp pure vanilla extract. 1/4 cup cocoa powder, for rolling. 1/4 cup finely chopped nuts optional, for coating. Pinch of salt.
Instructions: In a saucepan, heat the heavy cream over medium heat until it starts to simmer, but do not let it boil. Remove from heat and add the finely chopped chocolate to the hot cream. Let it sit for a minute to melt. Stir the chocolate and cream mixture until smooth and well combined. Add the unsalted butter, vanilla extract, and a pinch of salt to the mixture. Stir until the butter is completely melted and the mixture is silky. Pour the chocolate mixture into a shallow dish and refrigerate for at least 2 hours or until it becomes firm. Using a spoon or a melon baller, scoop out small portions of the chocolate mixture and roll them into bite-sized truffle balls. Roll the truffles in cocoa powder or finely chopped nuts, if desired, for an extra layer of flavor and texture. Place the finished truffles on a parchment paper-lined tray and refrigerate for another 30 minutes to set. Once set, your decadent chocolate truffles are ready to be enjoyed. Keep them refrigerated until serving.
