Ingredients: 1 cup finely chopped chocolate. 1 cup ground pralines. 1 cup almond flour. 3/4 cup powdered sugar. 4 large egg whites. 1/4 cup granulated sugar. 1/2 tsp vanilla extract. 1/4 tsp cream of tartar. A pinch of salt.
Instructions: Warm the oven up to 325F 160C and put parchment paper on a baking sheet. Put the powdered sugar, ground pralines, and almond flour in a bowl and mix them together. Combine well. Whisk the egg whites in a different bowl until they get foamy. Keep whisking after adding the cream of tartar. While whisking, add the granulated sugar little by little until stiff peaks form. Using a spatula, slowly mix the dry ingredients into the egg whites. Put the dough into a piping bag, and then use it to pipe small rounds onto the baking sheet that has been prepared. The cookies should be baked for 12 to 15 minutes, or until they are firm and a little golden. Place the cookies on a wire rack to cool all the way down. Let the chocolate that has been chopped up cool a bit after melting it. Put some melted chocolate on the flat side of half of the cookies. Place the remaining cookies on top of the chocolate-covered cookies to make sandwiches. Wait until the chocolate is set before you serve it.
