Indulge in the perfect combination of sweet and salty with this low-carb chocolate dipped bacon. It's a delightful snack that's both delicious and satisfying without the guilt of high carbs.
Ingredients: 6 slices of thick-cut bacon. 2 ounces of dark chocolate 85% cocoa or higher. 1 tablespoon of coconut oil. 1 tablespoon of powdered erythritol or your preferred low-carb sweetener. 1/4 teaspoon of vanilla extract. Pinch of sea salt.
Instructions: Set the oven temperature to 400F 200C. Arrange the bacon slices on a parchment paper-lined baking sheet. Bake the bacon for 15 to 20 minutes, or until it's crispy, in a preheated oven. Watch it closely to avoid overcooking. After taking the bacon out of the oven, place it on a plate covered with paper towels to absorb any leftover grease. Allow it to cool fully. Mix the coconut oil and dark chocolate in a bowl that is safe to use in the microwave. Once the chocolate is completely melted and smooth, microwave it for 20 seconds at a time, stirring after each 20 seconds. Mix the vanilla extract, sea salt, and powdered erythritol into the melted chocolate mixture. Let any excess drip off after dipping each bacon slice halfway into the chocolate mixture. After returning the bacon covered in chocolate to the parchment paper, allow it to cool for approximately ten minutes at room temperature. For an added flavor boost, feel free to top with a little more sea salt. To make the chocolate harden, refrigerate the bacon for approximately half an hour. Your Low Carb Chocolate Dipped Bacon is ready to eat once the chocolate sets.
