These Chipotle Bourbon Porky Beans are a smoky and tasty take on traditional pork and beans. They are slow-cooked to perfection, combining the richness of pork belly with the strong flavors of chipotle and bourbon. A tasty side dish for barbecues that will make your outdoor gatherings more fun.
Ingredients: 1 lb pork belly, diced. 2 cups dried navy beans, soaked overnight. 1 large onion, finely chopped. 3 cloves garlic, minced. 1/2 cup bourbon. 1/4 cup tomato paste. 1/4 cup molasses. 3 tbsp chipotle peppers in adobo sauce, minced. 2 tbsp Dijon mustard. 2 tbsp apple cider vinegar. 4 cups chicken broth. Salt and pepper to taste. Chopped fresh cilantro for garnish.
Instructions: In a large pot, brown the diced pork belly over medium heat until crispy. Remove excess fat, leaving about 2 tablespoons in the pot. Add chopped onions and garlic to the pot, saut until softened. Pour in the bourbon, scraping the bottom of the pot to deglaze. Allow it to simmer for 2-3 minutes. Stir in tomato paste, molasses, chipotle peppers, Dijon mustard, and apple cider vinegar. Add soaked navy beans, chicken broth, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours or until beans are tender. Adjust seasoning if needed and serve hot, garnished with chopped cilantro.
