This dish, steak skewers with chimichurri sauce, is tasty and easy to make. It's great for grilling season. The beef cubes are soaked in a sour chimichurri sauce for a while before being grilled to perfection.
Ingredients: 1 lb beef steak, cut into cubes. Salt and pepper to taste. 1/4 cup olive oil. 3 tablespoons red wine vinegar. 3 cloves garlic, minced. 1 shallot, minced. 1/4 cup fresh parsley, finely chopped. 2 tablespoons fresh oregano, finely chopped. 1 teaspoon crushed red pepper flakes. Wooden skewers, soaked in water.
Instructions: Add salt and pepper to the beef cubes. Put garlic, shallot, parsley, oregano, crushed red pepper flakes, olive oil, and red wine vinegar in a bowl. Mix them all together to make chimichurri sauce. Put the beef cubes in a bowl and add half of the chimichurri sauce. Let them sit for at least 30 minutes. Use the wet wooden skewers to thread the beef cubes that have been marinated. Warm the grill up to a medium-high level. Grill the steak skewers for three to four minutes on each side, or until they are done the way you like them. You can dip the steak skewers in the rest of the chimichurri sauce that you serve with them.
