These Popsicles with Roasted Berries and Chia Seeds are a tasty and healthy summer treat. Adding chia seeds gives the berries extra nutrients and makes them taste better after being roasted. Greek yogurt gives these popsicles a creamy texture and a lot of protein, making them both tasty and good for you.
Ingredients: 2 cups mixed berries strawberries, blueberries, raspberries. 2 tablespoons honey. 2 tablespoons chia seeds. 1 cup Greek yogurt.
Instructions: Preheat oven to 375F 190C. Spread the mixed berries on a baking sheet and drizzle with honey. Roast in the preheated oven for 15-20 minutes, until the berries are softened and juicy. Remove from the oven and let cool slightly. Transfer the roasted berries to a blender and blend until smooth. Stir in chia seeds and Greek yogurt until well combined. Pour the mixture into popsicle molds. Insert popsicle sticks and freeze for at least 4 hours or until firm. Once frozen, remove popsicles from molds and enjoy!
