The first thing I like to do when I get back from a trip is have a nice home cooked meal. I'm usually getting caught up with project so I don't have too much time to spend in the kitchen. I'll pop over to the grocery store, get already cut up veggies and grilled chicken or roasted chicken depending on my mood. To make this salad, fill the plate with butter lettuce and top it with sliced, grilled chicken breasts in 1/2 inch slides. Add 1/4 of a red onion, kalamata olives, dried cranberries and CHEVOO truffled goat cheese. Add salt, pepper, a little lemon juice, and drizzle with CHEVOO’s infused-oil and serve!
