Ingredients: 1 pound thick-cut bacon. 2 cups fresh or frozen cherries, pitted and halved. 1/4 cup bourbon whiskey. 1/2 cup granulated sugar. 1/4 cup brown sugar. 1/4 cup all-purpose flour. 1/2 teaspoon ground cinnamon. 1/4 teaspoon salt. 1 cup old-fashioned oats. 1/2 cup chopped pecans. 1/4 cup cold unsalted butter, cut into small pieces.
Instructions: Set the oven temperature to 175C 350F. Crisp up the bacon by cooking it in a skillet over medium heat. Take out the bacon from the skillet, break it up, and reserve. Remove all but about 1 tablespoon of the bacon grease from the same skillet. When the cherries begin to soften, add them and cook for about two minutes. Add the bourbon whiskey and cook for an additional two to three minutes, so that the cherries can absorb the flavor and the alcohol can evaporate. Take off the heat and place aside. Grated sugar, brown sugar, all-purpose flour, ground cinnamon, and salt should all be combined in a mixing bowl. Add the crumbled bacon, chopped pecans, and old-fashioned oats and stir. Blend thoroughly. Using a pastry cutter or your fingers, add the cold butter pieces to the mixture and mix until the mixture resembles coarse crumbs. Grease a 9 x 9-inch baking dish and evenly distribute the cherries soaked in bourbon. Evenly scatter the crumbled oatmeal and bacon mixture on top of the cherries. Bake for 25 to 30 minutes in a preheated oven, or until the cherry filling is bubbling and the topping is golden brown. Before serving, take it out of the oven and allow it to cool slightly.
