A delicious and creamy potato soup cooked in a slow cooker, with the added goodness of cheddar cheese and the savory flavor of bacon. The ranch seasoning mix adds a unique twist to this comforting soup.
Ingredients: 6 slices of bacon, cooked and crumbled. 6 cups of peeled and diced potatoes. 1 cup of diced onions. 1 cup of diced celery. 1 cup of diced carrots. 4 cups of chicken broth. 1 packet 1 oz of ranch seasoning mix. 1 teaspoon of garlic powder. 1/2 teaspoon of salt. 1/2 teaspoon of black pepper. 2 cups of shredded cheddar cheese. 1 cup of heavy cream. Chopped green onions for garnish optional.
Instructions: In a slow cooker, combine diced potatoes, onions, celery, and carrots. Add the chicken broth, ranch seasoning mix, garlic powder, salt, and black pepper. Stir well to combine all the ingredients. Cover and cook on LOW for 7-8 hours or until the potatoes are tender. Use an immersion blender to partially blend the soup, leaving some chunks for texture. Stir in the shredded cheddar cheese and heavy cream. Cover and cook on LOW for an additional 30 minutes or until the cheese is melted and the soup is heated through. Serve the soup hot, garnished with crumbled bacon and chopped green onions if desired. Enjoy!
