Perfect for a substantial breakfast or brunch, these savory Cheese Bacon Breakfast Muffins are delicious. They are incredibly tasty and simple to make, with plenty of cheddar cheese and crispy bacon.
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 teaspoons baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1 cup grated cheddar cheese. 1/2 cup cooked and crumbled bacon. 2 large eggs. 1 cup buttermilk. 1/4 cup unsalted butter, melted. 1/4 cup chopped green onions.
Instructions: Adjust the oven temperature to 375F 190C and prepare a muffin tin by lining it with paper liners. Combine the flour, baking soda, baking powder, salt, and black pepper in a mixing bowl. Add the crumbled bacon and grated cheddar cheese to the dry ingredients and stir. Beat the eggs in a separate bowl and mix in the buttermilk, melted butter, and finely chopped green onions. Blend thoroughly. Once the wet and dry mixtures are combined, carefully fold them together until just combined. Don't overmix; a few lumps are acceptable. Load the muffin batter into the muffin tin, filling each cup to about two thirds of the way to the top. A toothpick inserted into the center of the muffins should come out clean after 18 to 20 minutes of baking in a preheated oven. After taking the muffins out of the oven, allow them to cool in the muffin tin for a few minutes before moving them to a wire rack to finish cooling. These mouthwatering cheese and bacon breakfast muffins are best served warm or at room temperature.
