The Green Park Cocktail by Erik Lorincz: 1 1/2 oz - Old Tom Gin 6 - Basil leaves 1 oz - lemon juice 1/2 oz - simple syrup 1/2 oz - aquafaba 3 dashes- celery bitters -in the bottom of a shaker, muddle basil and simple syrup. Add lemon juice and aquafaba, Dry shake for 30 seconds to froth. Add ice, Gin and celery bitters and shake until cold. Rorschach. Recipe: 2 oz Old Tom gin (Hayman's), 1 oz Lillet blanc, 2 dashes Bitter Truth celery bitters, stirred and strained into a frosty coupe. Garnish with frosty designs. Notes: Wanted someting crisp, clean, and a bit on the sweet side, and this delivered to perfection. The celery bitters work wonders to add complexity and some vegetal notes to an otherwise more one dimensional mix. Might be an original... but probably not.
