Use celeriac noodles instead of regular pasta for a low-carb and gluten-free version of Alfredo. This dish is creamy, rich, and healthy because it has grilled chicken on top of it.
Ingredients: 2 chicken breasts, grilled and sliced. 2 medium celeriac celery root, spiralized into noodles. 1 cup heavy cream. 1/2 cup grated Parmesan cheese. 2 cloves garlic, minced. 2 tablespoons butter. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: In a saucepan, melt the butter over medium heat. Add minced garlic and saut until fragrant. Pour in the heavy cream, stirring constantly. Add grated Parmesan cheese and continue stirring until the sauce thickens. Season with salt and pepper to taste. In a separate pan, cook the spiralized celeriac noodles until tender. Grill the chicken breasts until cooked through, then slice them. Once the celeriac noodles are done, toss them with the Alfredo sauce. Serve the Alfredo celeriac noodles topped with sliced grilled chicken. Garnish with chopped fresh parsley before serving.
