Ingredients: 1 cup grated carrots. 1 cup grated apples. 1/2 cup cream cheese, softened. 1/2 cup granulated sugar. 1/4 cup brown sugar. 2 large eggs. 1/2 cup vegetable oil. 1 1/2 cups all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon salt. 1/2 cup chopped walnuts optional. 1/2 cup raisins optional.
Instructions: Start by heating the oven to 350F 175C. Grate the apples and carrots and put them together in a bowl. Put away. Mix the brown sugar, granulated sugar, and cream cheese together in a different bowl until they are smooth and creamy. Mix the eggs and oil into the cream cheese until it's smooth. Mix the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt in a different bowl using a whisk. Slowly add the dry ingredients to the wet ones, mixing only until everything is well combined. Grate the apples and carrots and mix them into the batter. If you want to add walnuts or raisins, chop them up and add them in too. Put paper liners in a muffin tin or grease the muffin cups. Fill each muffin cup about two thirds of the way to the top with muffin batter. After the oven is hot, bake the muffins for 20 to 25 minutes, or until a toothpick stuck in the middle comes out clean. After taking the muffins out of the oven, let them cool for a few minutes in the muffin tin before moving them to a wire rack to cool all the way through.
