A delightful salad featuring the sweetness of grilled cherries and blueberries, balanced with creamy goat cheese and crunchy candied hazelnuts, all dressed in a tangy balsamic vinaigrette.
Ingredients: 1 cup cherries, pitted. 1 cup blueberries. 4 oz goat cheese, crumbled. 1/2 cup candied hazelnuts. 4 cups mixed greens. 1/4 cup balsamic vinegar. 2 tbsp olive oil. 1 tbsp honey. Salt and pepper to taste.
Instructions: Warm the grill up to a medium-high level. Balsamic vinegar, olive oil, honey, salt, and pepper should all be mixed together in a bowl. To make the dressing, mix it well. Put cherries on skewers and grill them for two to three minutes on each side, until they start to turn brown. Take the cherries off the grill and give them a minute or two to cool down. Put the mixed greens in a big salad bowl. Grilled cherries, blueberries, crumbled goat cheese, and candied hazelnuts should be put on top of the greens. Pour the dressing over the salad and gently toss everything together. Serve right away and enjoy!
