It's spicy and creamy because buffalo sauce, Greek yogurt, celery, and carrots are mixed with slow-cooked chicken. Ingredients: 1 lb boneless, skinless chicken breasts. 1/2 cup buffalo sauce. 1/4 cup low-fat Greek yogurt. 1/4 cup celery, finely chopped. 1/4 cup carrot, finely grated. 8 whole wheat slider buns. Lettuce leaves for garnish. Optional: low-fat blue cheese dressing for drizzling.
Instructions: Place chicken breasts in the slow cooker. Pour buffalo sauce over the chicken. Cover and cook on low for 4-6 hours, or until chicken is tender and can be easily shredded with a fork. Remove the chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker, add Greek yogurt, celery, and carrot. Stir to combine.
