A delicious gluten-free coffee cake infused with the flavors of apple and cinnamon, perfect for breakfast or brunch gatherings.
Ingredients: 2 cups gluten-free flour blend. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 cup unsalted butter, softened. 3/4 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup plain Greek yogurt. 2 medium apples, peeled, cored, and diced.
Instructions: Warm the oven up to 175F 350C. A 9-inch round baking pan should be greased and floured. Mix gluten-free flour blend, baking powder, baking soda, salt, and cinnamon in a bowl with a whisk. Softened butter and sugar should be mixed together in a different bowl until the mixture is light and fluffy. Slowly add the eggs, making sure to mix well after each one. Add vanilla extract and stir. Slowly add the dry ingredients to the butter mixture, mixing them in with the Greek yogurt every so often. Start with the dry ingredients and end with the Greek yogurt. Mix in the apple dices until they are spread out evenly. Spread out the batter in the baking pan that has been prepared. Put it in the oven and bake for 40 to 45 minutes, or until a toothpick stuck in the middle comes out clean. Cool the cake in the pan for 10 minutes, then move it to a wire rack to cool all the way down. Cut and serve. Have fun!
