Ingredients: 1 can 15 ounces chickpeas, drained and rinsed. 2 cups fresh spinach leaves. 1/4 cup tahini. 3 tablespoons freshly squeezed lemon juice. 2 cloves garlic, minced. 2 tablespoons olive oil. Salt and pepper, to taste. Water as needed to adjust consistency.
Instructions: In a food processor, combine chickpeas, spinach, tahini, lemon juice, garlic, and olive oil. Blend until smooth, adding water as needed to achieve desired consistency. Season with salt and pepper to taste. Transfer the hummus dip to a serving bowl. Garnish with a drizzle of olive oil and some freshly chopped parsley or lemon zest if desired. Serve with pita bread, crackers, or fresh vegetables.
