This vibrant pink latte is made from fresh beetroot and vegan milk, offering a nutritious and visually appealing beverage.
Ingredients: 1 small beetroot, peeled and chopped. 2 cups vegan milk almond, soy, oat, etc.. 1 tablespoon maple syrup or sweetener of choice. 1/2 teaspoon vanilla extract.
Instructions: In a small saucepan, combine the chopped beetroot and vegan milk. Bring to a gentle simmer over medium heat, then reduce the heat to low and let it simmer for 5-7 minutes, or until the beetroot is tender. Remove from heat and let it cool slightly. Transfer the mixture to a blender and add maple syrup or sweetener and vanilla extract. Blend until smooth and creamy. Strain the mixture through a fine mesh sieve to remove any remaining beetroot solids. Pour the pink latte into mugs and serve hot. Optional: Garnish with a sprinkle of cinnamon or cocoa powder.
