These Lobster and Brie Grilled Cheese Sandwiches are the best grilled cheese you'll ever have. This sandwich is a treat because the rich and creamy Brie cheese goes so well with the juicy lobster meat.
Ingredients: 8 slices of bread. 1 lb cooked lobster meat, chopped. 8 oz Brie cheese, thinly sliced. 4 tbsp butter. 2 cloves garlic, minced. 1/4 cup fresh basil leaves. Salt and pepper to taste.
Instructions: Lay out 4 slices of bread and evenly distribute the chopped lobster meat on each slice. Add a layer of thinly sliced Brie cheese on top of the lobster. Place a second slice of bread on top to make a sandwich. In a small saucepan, melt the butter over medium heat. Add minced garlic and saut for 1-2 minutes until fragrant. Brush the outside of each sandwich with the garlic butter mixture. Heat a non-stick skillet or griddle over medium-low heat. Carefully place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. While cooking, press down on the sandwiches with a spatula to help the cheese melt and the sandwich to crisp up. Remove from heat, and open each sandwich to add fresh basil leaves.
