These Quinoa Breakfast Cakes are a tasty and healthy way to start the day. They make a filling and energizing breakfast because they are full of quinoa, bananas, and nuts. There is also no gluten in them, and maple syrup makes them naturally sweet.
Ingredients: 1 cup cooked quinoa. 2 ripe bananas, mashed. 1/4 cup almond butter. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 1/2 teaspoon cinnamon. 1/4 teaspoon salt. 1/2 cup rolled oats. 1/4 cup raisins. 1/4 cup chopped nuts e.g., walnuts or almonds.
Instructions: Preheat oven to 350F 175C. In a large bowl, combine cooked quinoa, mashed bananas, almond butter, maple syrup, vanilla extract, cinnamon, and salt. Mix well. Fold in rolled oats, raisins, and chopped nuts until evenly distributed in the mixture. Grease a muffin tin or use silicone muffin cups. Spoon the mixture evenly into the cups. Bake in the preheated oven for 25-30 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.
