a demonstration of “stretch and folds”
some people have asked me what i mean when i use the phrase “stretch and fold” so here's a demo!
this is some focaccia dough i’m prepping to make focaccia pizza for a get-together tomorrow. i wet my hand slightly before doing starting this video. you can see by the fourth stretch that the dough has tightened up, and the fifth stretch doesn’t have nearly the same elasticity as the first few stretches — the final fold is much more gentle than the first. after that one i just folded the dough in half and set it down.
this is my third round of stretch and folds, and now i’m going to bed. this dough will sit out (covered) near my window and bulk ferment for the next 10 hours at around ~65F.
