A hearty and comforting stew made with tender braised white beans, vegetables, and aromatic herbs.
Ingredients: 1 cup dried white beans. 2 tablespoons olive oil. 1 onion, diced. 2 carrots, diced. 2 celery stalks, diced. 4 cloves garlic, minced. 1 can diced tomatoes. 4 cups vegetable broth. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Rinse and soak the dried white beans overnight. In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery. Cook until softened, about 5 minutes. Add minced garlic, thyme, and rosemary. Cook for another 2 minutes. Stir in soaked white beans, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, or until beans are tender. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
