Another day another random brew, this time a Dark Braggot. Unfortunately I can't get our local honey due to lockdown so had to make do with supermarket stuff. Set honey is about half the price of regular and so easy to use, just stick the jars in a hot water bath to loosen it up.
Not sure how this will turn out as doing a 10L batch all grain, I've just steeped malts or used DME previously but had a load of Honey Malt to use up which our local brewery gave me a while back, so malt bills is 49% honey malt, 41.7% honey (late addition during cooling), 6.1% pilsner malt, 2% Roasted Barley & 1.2% Acid Malt. Wanted to mash at 68c but ended up at 65c so sparged at 70c.
Wouldn't be a dark braggot without homegrown Fuggles. 5g for 25 mins followed by 20g for the final 5 mins. Looking for those floral earthy flavours to pair against the sweet honey and bitter roast. Then I fermented with a few flakes of Hornindal Kveik which I dried last year. Took a bit of time to get going, even at 30c. Because I had to fit this in one of my large FVs I couldn’t really see much activity from the airlock due to the large headspace, but there did appear to be a small krausen. OG was only 1.070 for this one, I didn’t want it too strong. I just checked the gravity after 3 days at it’s at 1.009, so I’ll leave it a couple more days and check again but I think the Hornindal Kveik destroyed this one pretty well.
