WHAT IT IS: a perfectly delicate way to eat an egg. Cooked whites with a runny yolk. this method uses steam, not boiling water, to get the ideal textures. (nod to America's Test Kitchen, again)

INGREDIENTS:

eggs

1/2 inch of water

HOW TO MAKE IT:

boil water in a saucepan. once water is boiling, carefully add as many eggs as you want (there is plenty of power in the steam to cook a bunch of eggs). cover for 6 mins and 30 secs. Remove from heat. Run eggs under cold tap water for 30-60 seconds. Carefully peel and serve. I served this at breakfast with caremlized onions and cremini mushrooms and toast.

WHAT IT IS: In this first installment of Boring But Important, we hard boil an egg. I've always had trouble with hard boiling eggs. You get that gray/green ring around the yolk. Or the shell won't peel off properly. Or you undercook it. With some help from the good folks at America's Test Kitchen, I give you THE PERFECT HARD BOILED EGG!

INGREDIENTS:

4 eggs ( or however many you want)

water

HOW TO MAKE IT:

place eggs in a sauce pan and cover by 1 inch with cold water. Bring to a boil over high heat. Once boiling, take off heat and cover for 10 mins. Meanwhile, make an ice bath  in a medium bowl (ice and water).

After 10 mins, place eggs in ice bath for 5 mins. Take an egg out, gently start a crack by rolling egg against cutting board and peel. Works every time.
