These blueberry pie bars are a delightful twist on classic blueberry pie, offering the same fruity flavor in a portable and easy-to-make bar form. Perfect for picnics, potlucks, or simply enjoying as a sweet treat!
Ingredients: 1 cup unsalted butter, chilled and cubed. 1/2 cup granulated sugar. 1 teaspoon vanilla extract. 1/2 teaspoon salt. 2 cups all-purpose flour. 2 cups fresh blueberries. 1/2 cup granulated sugar. 2 tablespoons cornstarch. 1 tablespoon lemon juice. 1/4 teaspoon cinnamon. Powdered sugar for dusting optional.
Instructions: Preheat the oven to 375F 190C and grease a 9x13-inch baking pan. In a large bowl, cream together the chilled cubed butter, 1/2 cup sugar, vanilla extract, and salt until light and fluffy. Gradually add in the flour and mix until crumbly dough forms. Press 2/3 of the dough into the bottom of the prepared baking pan. In another bowl, combine the blueberries, 1/2 cup sugar, cornstarch, lemon juice, and cinnamon until well coated. Spread the blueberry mixture over the dough in the pan. Crumble the remaining dough over the blueberry layer. Bake in the preheated oven for 45-50 minutes, or until the top is lightly golden brown. Allow to cool completely before cutting into bars. Dust with powdered sugar if desired before serving.
