Ingredients: 4 cups fresh spinach leaves. 1/2 cup crumbled bleu cheese. 1/4 cup chopped red onion. 1/4 cup candied pecans. 1/4 cup dried cranberries. 1/4 cup sliced strawberries. Poppyseed dressing store-bought or homemade.
Instructions: Wash and dry the fresh spinach leaves, then place them in a large salad bowl. Sprinkle the crumbled bleu cheese, chopped red onion, candied pecans, dried cranberries, and sliced strawberries over the spinach. Drizzle your desired amount of poppyseed dressing over the salad. Start with a small amount and add more as needed to taste. Gently toss the salad to coat the ingredients with the dressing. Be careful not to overdress; you can always add more if desired. Serve the salad immediately as a refreshing and delicious side dish or light meal.

Ingredients: 8 oz pasta. 1/2 cup crumbled bleu cheese. 1/2 cup dried cranberries. 1/4 cup chopped walnuts. 1/4 cup chopped red onion. 1/4 cup chopped fresh parsley. 1/4 cup mayonnaise. 2 tablespoons sour cream. 2 tablespoons balsamic vinegar. Salt and pepper to taste.
Instructions: Follow the directions on the package to cook the pasta until it is al dente. Take it out and let it cool down. The cooked pasta, bleu cheese crumbles, dried cranberries, chopped walnuts, chopped red onion, and chopped fresh parsley should all be put in a large bowl. Whisk the mayonnaise, sour cream, and balsamic vinegar together in a different small bowl until everything is well mixed. Add the dressing to the pasta and toss it around so that everything is covered. Add salt and pepper to the salad as needed. Put it in the fridge for at least 30 minutes before you serve it so the flavors can mix. If you want, you can add more parsley as a garnish. Serve and have fun!
