Ingredients: 2 cups almond flour. 2 cups powdered sugar. 4 large egg whites, room temperature. 1 cup granulated sugar. 1 teaspoon lemon zest. Yellow food coloring optional. 1 cup blackberries. 8 ounces mascarpone cheese. 1/4 cup powdered sugar. 1 teaspoon vanilla extract.
Instructions: Adjust the oven temperature to 300F 150C and place parchment paper on two baking sheets. Pulverize the powdered sugar and almond flour in a food processor. Pulse until finely chopped and thoroughly mixed. Shift into a bowl for mixing. Beat the egg whites in a different mixing bowl until soft peaks form. While beating, gradually add the granulated sugar and beat until stiff, glossy peaks form. Gently fold the food coloring and lemon zest if using into the egg white mixture. Gently stir in the powdered sugar and almond flour mixture until the egg white mixture is smooth and well combined. Pour the batter into a piping bag that has a round tip on it. Pipe tiny circles, about an inch apart, onto the baking sheets that have been prepared. To create a slight crust, let the macarons sit at room temperature for approximately half an hour after tapping the baking sheets on the counter to release any trapped air. Bake for 15 to 18 minutes, or until the macarons are set and the tops are firm and smooth, in a preheated oven. Take them out of the oven and leave them on the baking sheets to cool completely. Blend together blackberries, vanilla extract, mascarpone cheese, and powdered sugar in a blender. Blend until creamy and smooth. To make your Lemon Macaron with Blackberry-Mascarpone Filling, spread or pipe the blackberry-mascarpone filling onto the flat side of half of the macarons, then sandwich with the remaining macarons. To allow the flavors to meld together, chill in the refrigerator for at least an hour before serving. Present and savor!
