A tasty and high-protein bean salad with a zesty dressing that combines kidney, garbanzo, and black beans.
Ingredients: 1 cup black beans, cooked. 1 cup kidney beans, cooked. 1 cup garbanzo beans chickpeas, cooked. 1/2 cup red onion, finely chopped. 1/2 cup bell pepper, diced. 1/4 cup fresh cilantro, chopped. 2 cloves garlic, minced. 1/4 cup olive oil. 2 tablespoons red wine vinegar. Salt and pepper to taste.
Instructions: In a large bowl, combine the black beans, kidney beans, and garbanzo beans. Add the chopped red onion, diced bell pepper, cilantro, and minced garlic to the beans. In a separate small bowl, whisk together the olive oil and red wine vinegar to create the dressing. Pour the dressing over the bean mixture and toss gently to combine.
