Enjoy a smoky twist on the classic blooming onion with this grilled version. The smoker infuses rich flavors into the onion while the crispy coating adds a delightful crunch.
Ingredients: 1 large sweet onion. 1 cup all-purpose flour. 1 cup buttermilk. 1 teaspoon paprika. 1 teaspoon garlic powder. 1 teaspoon salt. 1/2 teaspoon black pepper. Oil for grilling.
Instructions: Set the smoker's temperature to 375F 190C. Remove the onion's top and peel it, making sure the root stays whole. Cut the onion vertically, about 1/2 inch apart; do not cut through the root. Combine the flour, black pepper, paprika, garlic powder, and salt in a bowl. Make sure the flour mixture gets into the cuts on the onion by dipping it into the buttermilk first. Transfer the coated onion to a grill pan and brush with oil. After transferring the grill pan to the smoker, preheat it and cook it for 45 to 60 minutes, or until it becomes crispy and golden brown. For even grilling, turn the onion halfway through the cooking process. When finished, take it out of the smoker and give it a few minutes to cool before serving.
