Ingredients: 1/2 cup coconut oil, melted. 3/4 cup brown sugar. 1/4 cup granulated sugar. 1 egg. 1 teaspoon vanilla extract. 1 3/4 cups all-purpose flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup chocolate chips.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a mixing bowl, combine the melted coconut oil, brown sugar, and granulated sugar. Mix until well combined. Add the egg and vanilla extract to the mixture and continue mixing until smooth. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Stir in the chocolate chips. Drop rounded tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
