Basic Banana Bread

Another attempt on our old favourite, and this one was by far the best we have tried.

The secret is when the mashed banana is added. As this recipe required us to add the banana last and gently stir through, this meant that the banana had a marbling affect and the flavour of the banana was far more celebrated. A tip this recipe recommended was spraying a spatular with oil and laying it flat along the surface of the cake, before it was put into the oven. This meant that the cake already had an indent and there was less excess cracking. Moist, sweet and very easy to slice a generous slice,this recipe does justice to how banana bread should truly look, smell & taste.
