Ingredients: 1 cup couscous. 2 cups vegetable broth. 1 cup grated Parmesan cheese. 1/2 cup mozzarella cheese, shredded. 1/4 cup sun-dried tomatoes, chopped. 2 cloves garlic, minced. 1/4 cup fresh basil, chopped. Salt and pepper to taste. Olive oil for drizzling.
Instructions: Preheat your oven to 375F 190C. In a saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff it with a fork. In a large bowl, combine the cooked couscous, grated Parmesan cheese, shredded mozzarella cheese, sun-dried tomatoes, minced garlic, and chopped fresh basil. Mix well. Season with salt and pepper to taste. Transfer the couscous mixture to a greased baking dish and drizzle with olive oil. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the cheese is bubbly. Remove from the oven and let it cool for a few minutes before serving. Garnish with additional fresh basil if desired. Serve hot and enjoy!
