Ingredients: 2 ripe plantains, peeled and mashed. 2 eggs. 1/4 cup coconut oil, melted. 1/4 cup maple syrup. 1 tsp vanilla extract. 1 tsp ground cinnamon. 1/2 tsp baking soda. 1/4 tsp salt. 1 cup diced apples. 1/2 cup almond flour. 1/4 cup coconut flour. 1/4 cup chopped walnuts optional.
Instructions: Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and line a muffin tin with paper liners. The mashed plantains, eggs, maple syrup, melted coconut oil, and vanilla extract should all be combined in a mixing bowl. Blend thoroughly.
