Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp salt. 1/2 tsp ground cinnamon. 1/4 tsp nutmeg. 1/2 cup unsalted butter, cold and cubed. 1/2 cup sour cream. 1 large egg. 1 tsp vanilla extract. 1 cup apple, peeled, cored, and finely diced. 1/2 cup brown sugar. 1 tsp ground cinnamon. 1/2 cup powdered sugar. 1-2 tbsp milk. 1/2 tsp vanilla extract.
Instructions: Preheat your oven to 375F 190C. In a large mixing bowl, combine the flour, granulated sugar, baking powder, salt, ground cinnamon, and nutmeg. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or fork to cut the butter into the mixture until it resembles coarse crumbs. In a separate bowl, whisk together the sour cream, egg, and vanilla extract. Pour the wet ingredients into the dry mixture and stir until just combined. Gently fold in the finely diced apple. In a small bowl, mix together the brown sugar and ground cinnamon for the filling. Roll out the dough on a floured surface to about 1/2 inch thickness and cut into donut shapes using a donut cutter or a round cookie cutter. Place half of the cut-out donuts on a parchment-lined baking sheet and sprinkle each with a generous amount of the cinnamon-sugar mixture. Top each with another donut cutout to make a sandwich. Bake in the preheated oven for 10-12 minutes or until the donuts are lightly golden brown. While the donuts are baking, prepare the glaze by mixing powdered sugar, milk, and vanilla extract until smooth.
