Ingredients: 4 cups of apple juice. 4 cups of granulated sugar. 1/2 cup of red cinnamon candies. 1 packet of fruit pectin. 1/4 cup of lemon juice.
Instructions: In a large pot, combine the apple juice and lemon juice. Gradually stir in the fruit pectin and bring the mixture to a boil over medium-high heat, stirring constantly. Once boiling, add the red cinnamon candies and continue to stir until they are fully dissolved. Add the granulated sugar to the pot and stir until it's completely dissolved as well. Bring the mixture to a rolling boil and let it cook for about 1-2 minutes, or until it reaches the desired jelly consistency, while stirring continuously. Remove the pot from the heat and skim off any foam from the top of the jelly. Pour the hot candy apple jelly into sterilized jars, leaving about 1/4 inch of headspace at the top. Seal the jars with lids and bands, then process them in a boiling water bath for 10 minutes to ensure proper preservation.
