Ingredients: 2 cups spinach leaves. 1/2 cucumber, sliced. 1/2 avocado, diced. 1/4 cup cherry tomatoes, halved. 2 tbsp feta cheese, crumbled. 1 tbsp olive oil. 1 tbsp apple cider vinegar. 1/2 tsp Dijon mustard. Salt and pepper to taste.
Instructions: Put spinach, cucumber, avocado, cherry tomatoes, and feta cheese in a large bowl.
