Dorayaki are a classic Japanese sweet treat. These fluffy pancakes filled with sweet red bean paste are a delightful combination of soft and slightly crispy textures, along with the rich flavor of anko sweet red bean paste. Perfect for breakfast or as a sweet snack.
Ingredients: 2 cups all-purpose flour. 2 tsp baking powder. 1/2 cup sugar. 2 large eggs. 1/2 cup milk. 1/2 tsp vanilla extract. Sweet red bean paste anko. Vegetable oil for cooking.
Instructions: Combine the flour and baking powder in a bowl. Beat eggs and sugar together in a separate bowl until smooth. Mix thoroughly after adding the milk and vanilla extract to the egg mixture. To create a smooth batter, mix the dry and wet ingredients together. Lightly oil and heat a nonstick pan over low-medium heat. To make a pancake, ladle a tiny bit of batter into the pan about 3 inches in diameter. Flip the pancake when bubbles appear on the surface, and continue cooking it until it is golden brown on both sides. To make multiple pancakes, repeat the procedure with the leftover batter. Place a dollop of sweet red bean paste on the underside of a pancake and place another pancake on top, bottom sides facing each other. Warm up your delectable dorayaki and enjoy!
