Raw Spice Bar pack of the month: August
The Anguillian Spice Box
This monthās recipes included: Jerk Chicken WIngs, Bloody Mary Mango Salad, and Black Pepper Ice Cream
and the spices were: Scotch Bonnet Jerk (thyme, allspice, nutmeg, cinnamon, black peppercorns, Ā white onion, garlic, cayenne pepper, and scotch bonnet pepper), Pimento Bloody Mary (pimenton, celery salt, celery seeds, black peppercorns, Worcestershire powder, and cayenne pepper) and Poivre Melange (Malabar black peppercorns, Tellicherry peppercorns, green peppercorns, pink peppercorns, and white peppercorns)
Jerk Chicken Wings:
Ingredients: 1 onion, Scotch Bonnet Jerk spice pack, 4 scallions, 4 garlic cloves (minced), 4 limes (juiced), 2 tbsp soy sauce, 1tbsp salt, 1 tbsp brown sugar, 1.5lbs chicken wings, and 6tbsp vegetable oil
Directions:Ā
1. remove chicken from the fridge and let it come to room temp
2. Marinate: blend in a food processor: spices, onion, scallion, garlic, lime juice, soy sauce, veg oil, salt, brown sugar
3. Add chicken to a zipped bag with marinade and let it refrigerate overnightĀ
We just did 4 hours in a pan and stuck it in the fridge covered
4. Turn grill to high heat. Ā once hot, place wings directly on grill and cook until browned on all sides (about 5 mins), Move chicken to indirect heat and cook for another 20 mins, turning half way through. Ā
We donāt have a grill (sad apartment life) so instead we pan fried em for a min or so on each side to crisp em up and then backed them back in pan for 40 mins at 350. Ā
Bloody Mary Mango Salad:
Ingredients: Pimenton Blood Mary spice pack, 4 mangos, 2 limes (zest and juice)
Directions:
1. Dice up mangos and remove peel and place into a large serving bowl
2. combine limes and spice pack into the bowl to taste with mangos and serve
So thoughts:
The chicken was delicious! I wish we had a grill because then the wings would have been extra crispy and wonderful. Ā The marinade was full of flavor and highly recommend it/ will try to recreate it again.
The mango salad was a little overpowering, but then again I did not read to add the spicesĀ āto tasteā, which would have prevented me from running back into the kitchen to grab a glass of milk to quench the fire on my tongue. I put the mangos on a bed of greens to 1 give my plate some color and 2. to add something to counter the mango. Ā the picture on the recipe card had what looks like tomato and cilantro in it (which i thought the recipe called for, which was a little deceiving), so I may try to add some tomatoes and avocado to give it a little more life than straight mangos and lime juice. Ā
Sadly I forgot to get all of the ingredients for the black pepper ice cream, so I will add that at a later date. Ā Not to mention I did try a previous ice cream and botched it horribly, so Iām a little scared to repeat it. Ā
I wanted to do this because 1. we have been doing the Raw Spice Bar since January/ February and it has been so delicious and cannot wait to see the new recipes and themes every month. 2. We make slight changes to the recipes either due to lack of available ingredients or personal preference and forget the changes made 3. I wanted to share this awesome site with more people and spread the word. Ā Enjoy !

Lexus Ryan, one of the poets from the book Where I See The Sun ā Contemporary Poetry in Anguilla performed his poetry in Haiti at CARIFESTA 2015, said Jacqueline Sample, president of House of Nehesi Publishers (HNP).
Ryan is one of Anguillaās busiest poets and the edition of Where I See The Sun published by HNP last May is one of the regionās newest anthology of poems, said Sample.
