Worldclass wines and a menuthatis the best compilation ive seen of the essence of Asturias. We enjoyed every course and every wine but if i had to choose 3, they would be “colagenos”(eel and pork gelatinous parts) “cantabrico” (a seafood symphony) and “el gochu” ( northern pork with a sublime cabbage purée). And for the wines, special mencion for the Palo Cortado by Cayetano del Pino and the Rufian and its intense berries taste and light body.
