Ingredients: 400g macaroni pasta. 200g grated Emmental cheese. 200g grated Gruyre cheese. 2 onions, thinly sliced. 200g bacon, diced. 3 cups milk. 3 tablespoons butter. 2 tablespoons all-purpose flour. Salt and pepper to taste. 1 pinch nutmeg. Chopped parsley for garnish.
Instructions: Follow the directions on the box to cook the macaroni pasta. Once it's done, drain it and set it aside. Warm up 2 tablespoons of butter in a big pan over medium-low heat. Slice the onions and dice the bacon and add them to the pan. Make sure the bacon is crispy and the onions are caramelized. Melt the rest of the butter over medium-low heat in a different saucepan. To make a roux, whisk in the flour. To get golden, cook for one to two minutes. Pour the milk in slowly while whisking all the time to avoid lumps. Once the milk mixture starts to simmer, add the grated Emmental and Gruyre cheese and mix it in until it melts and is smooth. To taste, add salt, pepper, and nutmeg to the cheese sauce. Add the cooked macaroni to the cheese sauce and the onion and bacon mixture that has been caramelized. Combine well. Hot Swiss Macaroni and Cheese Alplermagronen should be served with chopped parsley on top.
