To make your own hot pepper vinegar for spicing up greens and slaws...
Choose a bunch of hot peppers of one or many varieties. Clean them and pack them in a clean, sterilized jar. Bring to a boil enough white or cider vinegar to cover the peppers in your jar. Pour the vinegar over the peppers until it covers them. Seal the jar.
Let peppers soak in the vinegar for a couple of weeks before using the vinegar in recipes. Use vinegar to taste.
