Instant Pot Chipotle Pulled Pork Bowls have strong, smoky flavors that you will love. This simple recipe has tender pulled pork that has been spiced with chipotle and adobo. It is served over rice and black beans, and the creamy avocado is a great addition.
Ingredients: 3 lbs pork shoulder, trimmed and cut into chunks. Salt and black pepper to taste. 1 tablespoon olive oil. 1 onion, finely chopped. 4 cloves garlic, minced. 1 cup chicken broth. 2 chipotle peppers in adobo sauce, minced. 1 tablespoon adobo sauce. 1 teaspoon ground cumin. 1 teaspoon dried oregano. 1/2 teaspoon smoked paprika. 1/2 teaspoon ground coriander. 1/4 cup orange juice. 2 tablespoons lime juice. For serving: Cooked rice, black beans, avocado slices, cilantro, lime wedges.
Instructions: Add salt and black pepper to the pork chunks. Put the Instant Pot in "saut" mode. Put in some olive oil and brown the pork pieces all over. Take the pork out of the Instant Pot and set it aside. Put chopped onion and minced garlic in the same pot and cook them until they get soft. Add chicken broth and scrape up any browned bits in the pot to deglaze it. Adobo sauce, cumin, oregano, smoked paprika, ground coriander, orange juice, and lime juice should all be added. Mix well. Add the browned pork chunks back to the Instant Pot and make sure they are covered in the spice mix. Set the Instant Pot's lid to sealing, then close it and cook on high pressure for an hour. After the cooking is done, let the pressure drop naturally for 15 minutes. Then, release any remaining pressure by hand. Shred the soft pork in the tasty sauce with forks.
