ik you mentioned not having too many Ivan and Fang headcanons because they're not really that present in most episodes, but I have a few I'll share
Fang is just a sweetheart who's very willing to take care of any lil one if they need it. He's more than willing to have a cuddly tiny one in his lap.
Ivan is very good at comfort. He knows that sometimes, emotions get too much and he'll just let a tiny one hug him. He'll let them be a bit angry(within reason) and is very good at getting energy into better outlets
He and Stede, if they need to, are the perfect tag team. Ivan can get a tiny one to spill their troubles, Stede knows how to deal with them
Ivan's a bit better at the "practical" aspects, compared to Fang being better at the "play" aspects(aka Fang is really good at keeping shit from hitting the fan and keeping a little one happy, but Ivan is the one who's better once shit hits the fan and they need to either cheer up or at least redirect the less positive emotions)
These two are some of the best with a tiny Izzy. Ivan is, surprisingly enough, Izzy's favorite babysitter. Fang is second, but it's close
