A delightful one-pot dish featuring tender chicken, fluffy rice, and vibrant veggies in a creamy 7-Up infused sauce. Perfect for a quick and flavorful meal using your Instant Pot.
Ingredients: 1.5 lbs boneless, skinless chicken breasts. 1 cup long-grain white rice. 1 cup baby carrots, sliced. 1 cup broccoli florets. 1 cup chicken broth. 1 cup 7-Up or lemon-lime soda. 1 cup heavy cream. 1/2 cup grated Parmesan cheese. 1/4 cup all-purpose flour. 2 tablespoons butter. 2 cloves garlic, minced. 1 teaspoon dried thyme. Salt and pepper to taste.
Instructions: Add salt, pepper, and dried thyme to chicken breasts. Use the "Saut" function on the Instant Pot to melt the butter. Cook the chicken on both sides. Take it out and set it aside. In the same pot, cook the garlic until it smells good. To make a roux, add flour and stir it in. Add heavy cream, 7-Up, and chicken broth. Mix until it's smooth. Put in broccoli, carrots, and rice. Add the chicken that has been browned on top. Put the lid on the Instant Pot and set it to "Manual." Cook on high pressure for 8 minutes. After cooking, quickly let the pressure out. Open the lid slowly. Mix in the Parmesan cheese until it melts and the sauce gets smooth. If you need to, add more salt and pepper to taste.
