The boy said he wanted to try meatloaf. When he asks for anything new, I make an effort to make it happen. I haven’t had meatloaf since before I became vegetarian over 35 years ago so I don’t have a strong memory of what it should look or taste like. But we had impossible burger and everything else I needed so I went for it. I was just going to make a regular meatloaf recipe and sub impossible burger. But then I found one from @karissasvegankitchen specifically for IB and it seemed easier. I was also concerned the IB would cook faster than beef and I didn’t want it to get too dry. So I followed that for the loaf. Then I took a glaze from @natashaskitchen that sounded good. I baked the loaf for 20 minutes, then put the glaze on and baked for 10 more minutes. It turned out great! And the boy actually said it was good and ate his whole slice. I think of meatloaf as something you eat with mashed potatoes and green beans, so I made potatoes from scratch and opened a can of green beans I had bought for green bean casserole. 😂 I’ll definitely make this again.
