In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, and mix until a dough forms. Divide the dough into two equal parts, wrap each portion in plastic wrap, and refrigerate for at least 1 hour.
